  1. To Make Salad: Rinse and cook the rice in a medium sized sauce pan until it soaks up most of the water. It should be soft and falling apart slightly. Drain the rice. Then wash, de-stem and chop the kale. Coat a pan with extra virgin olive oil or coconut oil and sautee the kale until it starts to wilt. Add a tad of pepper and pink sea salt to taste. Then combine the rice and kale in a large bowl and mix evenly.
  2. To Make Dressing: Combine all ingredients in a mixing bowl and stir until the tahini and miso has dissolved completely. Add more water or rice vinegar as needed. Then pour over your salad.
