Carrot Cake Protein Balls

I haven’t found Bourbon Vanilla Extract in the grocery store, so your best bet is ordering it online. Hopefully you’ll be able to source it locally rather than wait for it in the mail.

Once you get yourself some bourbon vanilla extract you’re off to the races to make these delicious carrot cake protein balls! They are highly portable as they are just little bite sized balls of protein. I would make a batch of these after work or on the weekends as you can keep them and take them into work and have healthy snacks during the day.  Or pack them into your children’s lunch so they have a healthy alternative that’s full of protein and easy to eat. That will keep them nice and alert while in classes so they can get good grades!

Ingredients
  • 1 scoop vanilla protein powder
  • 1/2 cup walnuts
  • 1/2 cup pitted dates
  • 1/2 cup tahini
  • 1/2 cup cashews
  • 1 tsp bourbon vanilla extract
  • 1/2 tsp cinnamon
  • 1 small carrot

Instructions
  1. Shred 1 small carrot with a vegetable peeler or a knife.
  2. Add everything to a blender and pulse until combined.
  3. It'll start to clump together and begin to form together. The mix will be soft and you'll easily be able to form them into balls.
  4. I like to lay mine out on parchment paper, but you can use any kind of non stick surface you desire. Then form into small balls. Freeze for two hours before eating or transferring to the fridge.
