BLT Wrap

BLT WRAP! Yes you can have a blt sandwich, I mean burrito. No, it is not gross as my wife assumed when I made this awesome burrito/wrap. Although as pictured this isn’t strictly a BLT wrap. There are more ingredients in this wrap than just bacon, lettuce, and tomato. There are also olives and salsa, as well as hot sauces that you can’t quite see because they’re piled in the center of the wrap. But! This is a great recipe to have in mind when you’re trying to figure out what to do with all the leftovers you have. Honestly we had a can of black olives left over from another meal and wern’t quite sure what to do with them. The same goes for the bacon, lettuce and tomato pictured in the wrap they were all just extra ingredients that couldn’t quite make enough food for anyone but me.

Then it dawned on me that you can just throw all of these things together in a tortilla and call it… BLT Wrap! So when you’re looking at a fridge full of leftovers when you made just a bit too much food for everyone think of this moment and throw it all in a tortilla and call it a snack. If you come up with your own conglomerations of food that is actually delicious please share it with me. I’m always looking for fun new things to try, especially if my wife thinks that it’s going to be gross and makes me try it first.

Ingredients
  • 3 large tortillas
  • 12 slices bacon
  • 4 oz sliced black olives can
  • 3 slices Pepperjack cheese
  • 1 tomato thinly sliced
  • 3 tbsp Pico de Gallo salsa
  • Red onion slices
  • Romaine lettuce
Servings: people

Instructions
  1. Spread Pico de Gallo all over the center of the tortilla.
  2. Top with bacon, olives, lettuce, cheese, onion, and tomatoes. Fold the sides in, and then roll up.
  3. Repeat two more times and now you have three wraps!
  4. We also (from time to time) have been known to add our Sriracha ranch to these wraps. Yum!
