Carefully take a rice paper wrapper and run it under some warm water for 20 – 30 seconds or until it is soft and pliable.
Place it on a clean surface or cutting board. Then load on the veggies! I like to start with lettuce first, then I add the rice noodles on top, followed by avocado and zucchini strips.
Think of this as a burrito. You want everything packed in tightly enough to roll. Once all the veggies are in, gently lift the bottom of the rice paper and fold and roll it over the top of your veggies.
Once they’re covered by the paper (which should leave you with a little more than a quarter of rice paper left), fold in the right and left sides one at a time.
Continue to roll the rest of the paper to close. Using a knife, cut your spring roll in half and dip into sauce of your choice.
I like to use hummus, Korean hot sauce, soy sauce, or tahini. Experiment with this and enjoy!
