Baked Carrot Fries

Regular old french fries are a staple food, at least in our house. It seems like we have them at least three times a week if not more. So when Taylor found a recipe for carrot fries we figured why not, we have carrots in our fridge and we love french fries. Really, what could go wrong?

As it turns out, nothing could go wrong. These fries are absolutely delicious, and they aren’t potatoes which is nice for a change of pace. You’ll still enjoy your finger foods of a regular fry, but your tummy will love the benefits of carrots.

Ingredients
  • 3 whole Carrots
  • 3 tbsp olive oil
  • 1/4 cup Parmesan cheese
  • 1 tbsp garlic salt
  • 1 tsp ground black pepper
  • 1/8 cup Fresh parsley chopped
  • 1 tbsp crushed red pepper

Instructions
  1. Preheat your oven to 400 degrees
  2. Slice the top and bottom off of each carrot, and slice them in half lengthwise and then cut them in half.
  3. Take those quarters and cut each one into thirds lengthwise.
  4. Mix all of the other ingredients in a bowl and toss the carrots in the resulting mix.
  5. Dump the bowl out onto a lined baking sheet.
  6. Bake for 20 minutes, or until they are to your desired crispiness.
  7. Let cool for a few minutes, and then enjoy them with your favorite dipping sauce! (We love to make Sriracha Ranch dressing!)

Steak Potato Tacos

Steak Potato Tacos! I know you’ve been to Taco Bell lately, face it we all have its the best fastest Mexican food chain out there and they’re literally everywhere. If you haven’t been there lately then you should know they offer a cheesy potato burrito which is amazing. It was also the reason why I decided to put potatoes in my Tacos on the one night we actually made them ourselves. I can attest that potatoes and steak go quite well together on tacos. Who would have thought? Not you since you’re reading the recipe to make steak and potato tacos!

But seriously, try these tacos out! I recommend adding a little flavor to your taco shell also. We lightly fry our shells in oil and then quickly dip them in a bowl of parmesan cheese for a wonderfully crunch and savory shell.

If you’re not interested in frying your taco shells in oil you do have an alternative, though I haven’t tried this method with any parmesan (im sure you chould still coat the shells)
There is aΒ Baked Taco RackΒ that you can use to not only form the shells but bake them so they are light and flaky, like you’d have at taco bell. But like I’ve made in the picture the oil method is the balance between baking and soft shelled tacos.

Ingredients
  • 2 lbs roast beef
  • 3 cup salsa
  • 2 cup beef broth
  • 1 tbsp taco seasoning
  • juice of 1 lime
  • 10-12 tortillas
  • 1/2 lb potatoes russet or Idaho baked until cooked and chopped into large pieces
  • 1/2 cup cilantro
  • 1 clove garlic minced
  • 2 cups Parmesan cheese

Instructions
  1. Put your roast into your crock pot with salsa, beef broth, lime juice, taco seasoning and cilantro
  2. Cook on low for 8 hours or on high for 6 hours
  3. Once the meat is cooked take it out and shred it
  4. Place your baked and chopped potatoes into a skillet on the stove with 2 tbsp olive oil and 1 clove Garlic cook on medium-high heat until golden brown, set aside
  5. Take each tortilla and butter one side of each, and press into a bowl of Parmesan cheese
  6. Cook each in a pan until the cheese turns golden brown
  7. Pleace a few fries/tots into the bottom of each taco shell
  8. Spoon 2-3 tbsp of the beef onto the top of the tots/fries
  9. Top with sour cream, cheese, guacamole, salsa, hot sauce, whatever you like!
  10. Enjoy!

Homemade French Fries

You won’t regret making these delicious and easy Homemade French Fries, they go well with any meal and who doesn’t love french fries?! These homemade french fries are much better for you than any fast food fries! The hubby and I make these every couple of weeks to go along with our chicken strips and usually some delicious cole slaw! (We will be posting those recipes very soon!)

Anyway, I am a huge fan of potatoes, as I’m sure you know if you have read any number of our posts! French fries are oneΒ of my favorite ways to eat potatoes! And we make them often!

Ingredients
  • 4 large potatoes
  • 2 tbsp garlic salt
  • 2 tbsp Parmesan cheese
  • 1 quart vegetable oil for frying

  1. Heat your oil to 350 degrees in a pan or deep fryer
  2. Slice your potatoes lengthwise about ΒΌ" thick
  3. Cut each round into slices so you end up with long strips
  4. Fry a couple of handfuls at a time and set them aside
  5. Continue until all fries have gone through once
  6. NOW the fun part, fry them each a second time and set them aside
  7. When they have all been re-fried you can put them on a serving dish or platter you can season them with whatever you like!
