Ingredients
  • Cupcakes
  • 1 cup Flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 pinch cinnamon
  • 3/4 stick Butter room temperature
  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 whole egg
  • 1/2 cup milk
  • Ganache
  • 3/4 cup chocolate chips
  • 1/4 cup heavy cream
  • Frosting
  • 1 cup peanut butter
  • 1 1/2 tsp vanilla
  • 2 1/2 cup confectioners' sugar
  • 6 tbsp milk

Instructions
  1. For cupcakes: Mix flour, baking powder, salt and cinnamon. In a separate bowl mix butter, peanut butter and brown sugar until blended. Add vanilla and egg. Add milk and flour mixture alternately while still mixing. Pour into lined cupcake pan and bake at 350* for 20 minutes, or until toothpick comes out almost clean.
  2. For Ganache: Melt chocolate and cream in metal bowl set in simmering water.
  3. For Frosting: Beat peanut butter and vanilla until blended. Add 3 tbsp milk and sugar while beating. Add the rest of the milk and sugar and beat until smooth. If needed, add a couple more tbsp milk.

  • 4 sticks butter
  • 1 cup white sugar
  • 2 cups brown sugar
  • 4 eggs
  • 2 tsp vanilla
  • 2 1/2 cup Flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 6 cups rolled oats
  • 2 cups butterscotch chips

  1. Preheat oven to 375 degrees
  2. Cream butter in a stand mixer until smooth
  3. Add sugars to mixer and beat until light and fluffy
  4. Add eggs and vanilla and mix to combine
  5. Sift dry ingredients together and add them to mixer
  6. Mixing until dough comes together
  7. Add rolled oats and mix again
  8. Stir in butterscotch chips
  9. Scoop into 1" balls and place 2" apart on parchment papered cookie sheet
  10. Bake for 12-14 minutes and remove to cooling rack
  11. Makes 7½ dozen

Carrot Cake Protein Balls

I haven’t found Bourbon Vanilla Extract in the grocery store, so your best bet is ordering it online. Hopefully you’ll be able to source it locally rather than wait for it in the mail.

Once you get yourself some bourbon vanilla extract you’re off to the races to make these delicious carrot cake protein balls! They are highly portable as they are just little bite sized balls of protein. I would make a batch of these after work or on the weekends as you can keep them and take them into work and have healthy snacks during the day.  Or pack them into your children’s lunch so they have a healthy alternative that’s full of protein and easy to eat. That will keep them nice and alert while in classes so they can get good grades!

Ingredients
  • 1 scoop vanilla protein powder
  • 1/2 cup walnuts
  • 1/2 cup pitted dates
  • 1/2 cup tahini
  • 1/2 cup cashews
  • 1 tsp bourbon vanilla extract

  • 1 small carrot

  1. Shred 1 small carrot with a vegetable peeler or a knife.
  2. Add everything to a blender and pulse until combined.
  3. It'll start to clump together and begin to form together. The mix will be soft and you'll easily be able to form them into balls.
  4. I like to lay mine out on parchment paper, but you can use any kind of non stick surface you desire. Then form into small balls. Freeze for two hours before eating or transferring to the fridge.

These little muffins are handy little snacks when you’re in a pinch for breakfast. They’re bite sized muffins so they are quite easy to eat and super healthy for you too. It’s pumpkin season (winter) so they will go along quite nicely with a starbucks pumpkin spice latte as well. I personally love when muffins and bread are hot, or warm like they were just taken out of the oven. So when I go and grab a few of these I’d pop them into the microwave right before leaving so they are nice and warm. I personally love Bob’s Red Mill Oats Rolled and look for recipes to make with these delicious oats.

Ingredients
  • 1/2 cup pumpkin puree
  • 1 cup Bob's Red Mill almond meal
  • 1 cup Bob's Red Red Mill Rolled Oats ground in a food processor
  • 1 whole egg or flax egg
  • 1 cup coconut milk
  • 1/2 tablespoon cinnamon
  • 1/2 tsp baking soda
  • 2 packets stevia optional

  1. Preheat the oven to 375 degrees.
  2. Once your mixture is smooth use a spoon to transfer it into the muffin tins. Careful not to over flow them as they'll rise a bit when they bake.
  3. Place the tins into the oven and bake for about 35 to 45 minutes. Check on them every 15 minutes or so and more often towards the end.
  4. They're done when a toothpick comes out relatively clean.

Easy Cinnamon Apple Pie!!!

It’s pie time! Easy Cinnamon Apple Pie that is and its delicious. Apple pie has always been a staple pie in America and now is the time for you to make one. This recipe makes it easier than ever to make a delicious pie. What makes it so easy is that it does not involve making a crust by hand. There is no need to keep the dough refrigerated or season it the day before you make the pie, no rather you just grab yourself a can of Pillsbury Cinnamon Rolls and make a crust from that!

Easy Cinnamon Apple Pie

It’s quite simple to make a Cinnamon Roll crust all you need to do is buy the can, pop it open and squish the individual rolls flat to cover your pie pan. Make sure you squish all the rolls together so there are no gaps. You don’t want your pie filling to fall between the cracks and burn on the pan. So make sure the individual rolls do form a bond with each other before adding that filling. We started in the center of the pie pan and placed the individual rolls in a circle until the edges were covered.

We use 9 Inch Pie Pan for this recipe, they are cheap and easy to clean. I especially like how the edges move slightly backward so you can fit more pie crust in and it’s easier to cut through the crust for perfect serving. I can’t say enough about these pans!

Ingredients
Pie:
  • 1 package Pillsbury Cinnamon Rolls
  • 3 large granny smith apples peeled and sliced
  • 1 stick butter room temperature
  • 1 cup brown sugar
  • 1 cup all-purpose flour
Icing:
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla
  • 1/4 tsp cinnamon
  • 2 tsp milk
Servings: pie

  1. Preheat oven to 400 degrees
  2. Grease your pie pan
  3. Take your cinnamon rolls out of the tube and press them out until they cover the bottom and the sides of the pan (it'll take some serious smashing!)
  4. Make sure there aren't any gaps in the crust!
  5. Pile your apples in the crust
  6. Mix your flour and brown sugar together
  7. Cut butter into 4 equal pieces
  8. With your fingers mix the butter into the flour/sugar until it crumbles
  9. Pour all of the crumble onto the top of the apples
  10. Bake for roughly 30 minutes, until the crust is cooked and the apples are bubbly
  11. While it cools mix the icing ingredients together and pour them into a Ziploc bag and cut one corner off
  12. Pipe icing on in a swirl on the top
  13. Serve with ice cream or just by itself!

  1. In a large bowl, mix together flour, salt, baking powder, baking soda and sugar; set aside. Also at this time you can combine your churro topping and set it aside. Preheat waffle iron
  2. In a separate bowl, beat the eggs. Stir in the buttermilk, butter and vanilla. Pour the buttermilk mixture into the flour mixture; Next fold in three shakes of cinnamon beat until blended
  3. At this time you can also melt your ½ cup of butter used to pour over waffles. Next generously spray your waffle iron with no stick cooking spray. Than ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Once fully cooked immediately pour melted butter on each side of the waffle and than dip each buttered side into your cinnamon/sugar churro mixture.
  4. Enjoy!
